The Scaritech lid for the NEO 20/9.8Ltr container is a double-sided lid, which can either allow air circulation for fermentation gases or provide a sealed environment, depending on the side used.
This versatility makes it suitable for both dough kneading and proofing. The lid in front position is used for fermentation, closing and stacking containers with air and gas circulation, allowing the dough to rise. The lid in reverse position allows closing and stacking containers without air circulation.
