As a wet heat model this would be well suited for the preparation of emulsified sauces such as hollandaise sauce as well as custard. A drainage tap on the front of the unit allows for the appliance to be drained quickly and risk-free after you have finished operating. Maximum holding capacity of 2x 1/1 GN.
